Because Bitcoin might not survive on fees for small payments alone. No one wants to pay $15 fees for a $5 cup of coffee. BTC might not be able to maintain security through future halvings if we don't have a little more fun on the mother timechain. 

Plus, wouldn't you want your delicious cat sandwich combo menus to be immutable for posterity?
